A few weeks ago Anna went to Portugal. So of course I had to make Pastel de Nata! This famous pastry is so DELICIOUS and also easy to make at home. The recipe consists of a combination of puff pastry with a filling of lemon, vanilla and cinnamon. The original recipe, which comes from a bakery in Lisbon, is secret, but this recipe comes pretty close.

Pastel de Nata

Porties: 12 pieces

Ingrediënten
  

  • 1 roll of puff pastry
  • 1 stick of cinnamon
  • 1 pod of vanilla
  • 4 egg yolks
  • 200 grams of sugar
  • 300 milliliters of milk
  • 125 milliliters of water
  • 30 gram of flour
  • 1 lemon

Method
 

  1. Preheat the oven to 230 degrees.
  2. Grease a muffin tin with butter and cut out rounds from the puff pastry. Cover the muffin tin with the rounds of puff pastry. Then prick several holes in it with a fork.
  3. Grate the zest of the lemon and heat it with the water, cinnamon stick and sugar in a saucepan. Bring this to a boil and keep stirring until it becomes a syrup. Then remove the cinnamon stick from the syrup.
  4. Beat the egg yolks together with the milk and the marrow from the vanilla pod.
  5. Add the flour to the syrup and mix together. Pour in the egg mixture while stirring and keep stirring until it becomes a custard.
  6. Pour the custard into the puff pastry trays and bake in the oven for 15 minutes.
